Mother’s Day Brunch!

April 26, 2012

Mother’s Day is just around the corner! No need to take Mom out for a pricey breakfast! There’s nothing she would Mothers-day-breakfast-in-bedappreciate more than a home-cooked brunch made with love! Show her how much you are grateful for all the times she cooked for you! Serve in bed with a tall glass of orange juice or a cup of coffee and you are guaranteed to make her day. To make it even more special, put a few colorful flowers in a vase to decorate the serving tray.

All you need is an amazing recipe and the right cookware from your friends at Cook Dazzle!

  • To cook eggs to perfection start with a non-stick pan. Our favorite is the All Clad Stainless Steel Non-Stick French Skillet.
  • Be sure to use a plastic spatula when preparing eggs as to not scratch the non-stick surface.
  • A good whisk is essential to a good omelet; one of our favorites is this stainless steel All Clad Whisk.
  • Don’t forget cooking Mom breakfast in bed also includes cleaning up too!

Ingredients:

6 eggs, beaten

1-ounce Parmesan, grated

1/2 teaspoon black pepper

Pinch salt

1 teaspoon butter

1/2 cup chopped roasted asparagus

1 tablespoon chopped parsley leaves

Directions:

Preheat oven to broil setting.

In medium size bowl, using a fork, blend together eggs, Parmesan, pepper, and salt. Heat 12-inch non-stick, oven safe saute pan over medium high heat. Add butter to pan and melt. Add asparagus to pan and saute for 2 to 3 minutes. Pour egg mixture into pan and stir with rubber spatula. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top. Sprinkle with parsley.

Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy. Remove from pan and cut into 6 servings. Serve immediately.

Happy Mother’s Day!
