National Corn Chip Day :)
Yum Yum Yum.. I loved when my dad made his ” Kickin Frito Pie” .. It was just a plain old frito pie but he made it fun. My dad has always been just a bog joker , so he liked to make everything fun while we learned. I remember the smell of the chilli like it was yesterday. I could smell it coming up the drive way I would run in the house and yell “YAY Kicken Frito Pie” , I would run up give him a big bear hug and run into the kitchen ” wash you hands pumpkin ” he would always yell out. How always had everything set out like an assembly line. ” Cut those tomatoes up real fine, Jess” .. Once we had everything out and ready.. we would dig in:) My dad always cooked for an army even though only 2 of us lived at home 🙂 I didnt mind though I could eat that delicious frito pie for weeks !
Dads “KICKIN” Chilli
-1 LBS Ground Beef
-1Cup Chopped Onions
-1/2 Cup Chopped Green bell Peppers
-2 1/2 Tablespoons of Chilli Powder
-1 Bay Leaf
-1 Can ( 29oz.) Diced Tomatoes
-1C Can (14oz) Tomato Sauce
– 1 Can (16oz) Chilli beans , Undrained
salt and pepper for some flavor
- In a large saucepan over medium high heat, combine the ground beef, onion and bell peppers. Saute for about 5 minutes, or until beef is browned. Drain excess fat.
- Add the chili powder, garlic, bay leaf, cumin, chile peppers, tomatoes, tomato sauce and salt and pepper to taste. Bring to a boil and reduce heat to low.. Stir in the beans and heat through.
Build a Frito Pie:
You can either serve it in large glass dish or induvidulay serve it onto plates .
-1 Large bage ” Frito lay Corn Chips”
– Chopped Tomatoes
-Chopped Green onion
Pour some chilli over the corn chips topped with Green onion, cheese, tomatoes, jalapoenos.
Put in the oven for like 5-10 min, to melt the cheese and enjoy!!
